	abstract: Die Seminarteilnehmer sollen mit den modernen Grundlagen der Herstellung und Stabilisierung von Emulsionen vertraut werden. Dabei werden thermodynamische und kinetische Aspekte der Stabilisierung behandelt. Die Teilnehmer sollen die generellen Voraussetzungen und Möglichkeiten zur Präparation und Berechnung von Emulsionen sowie den Zusammenhang zwischen der Natur der Emulgatoren mit der Struktur der Emulsion kennen lernen. Weiterhin wird ein Einblick in moderne physikalisch-chemische Charakterisierungsmethoden gegeben.
